Vegan recipes that are easy to follow, tasty and healthy
1 small onion
8 oz (225g) okra (generally available from Asian grocers)
2 fresh tomatoes
Whole cumin seeds and ground coriander
Fry chopped onion in 2 tbsp oil for 5 minutes. Top and tail okra and add to pan with
1 tsp salt, 1 tsp cumin seeds, 1 tbsp coriander. Mix well and cook gently for 5 minutes.
Add 7 fl. oz. water and simmer for 20 mins. Add tomatoes, roughly chopped. Serve
on rice, preferably basmati.
