Vegan recipes that are easy to follow, tasty and healthy
This is similar to Korma dishes you get in Indian restaurants. You can sometimes
find Korma curry powder. If not, any fairly mild curry powder will do.
1 large onion
Half a cauliflower, washed and cut into florets
1 carrot, peeled and sliced
1 large (540g) tin of new potatoes
1 yellow pepper
1 tin (400ml) of coconut milk
1/2 cucumber, chopped finely (optional)
Slice and fry the onion. Add 2 tablespoons of curry powder and cook for 1 minute.
Add the vegetables and cook for 5 minutes. Stir in the coconut milk and add salt
and pepper. Boil and simmer for 10-15 minutes until the vegetables are cooked. Garnish
with the cucumber and serve with rice.
