Vegan recipes that are easy to follow, tasty and healthy
This is a really filling dinner which can be eaten hot with vegetables and gravy
or cold with a salad. As it takes an hour in the oven to cook, you can bake potatoes
at the same time.
1 tin baked beans
4 oz. (100g) bread crumbs
4 oz. (100g) vegan 'sausage' mix, e.g. Sosmix.
Preheat oven to Gas Mark 4 / 180 °C / 350 °F.
Mash the baked beans in a bowl and stir in the bread crumbs. Leave for 10 mins. In
the meantime, chop the onion and fry for a few minutes. Add sausage mix, onion, 2
teaspoons of mixed herbs and salt and pepper to the bowl. Mix well and place into
a greased loaf tin. Brush the top with oil and bake for one hour.
